Since 1840, their traditional methods, notably the crushing of seeds with a millstone, have preserved the full flavor of their mustard blends.
Burgundy Mustard
Over centuries, Dijon mustard has earned its reputation through the quality of mustard seeds and the use of verjuice, both native to the region. Although Burgundy lost the geographical exclusivity for Dijon mustard, now only a process name, Edmond Fallot draws inspiration from traditional recipes to craft their genuine “Burgundy mustard.” This mustard, made exclusively in Burgundy with locally grown seeds and Burgundy white wine "aligoté," has been recognized as a Protected Geographical Indication (PGI) since 2009.

La Moutarderie Fallot has stood as an independent Burgundy family business since 1840. Combining modern industrial capability with artisanal know-how, they prioritize environmental protection through waste sorting and effluent processing. Currently led by Marc Désarménien, the grandson of founder Edmond Fallot, the company’s twenty employees are all dedicated to maintaining product quality.
