Souflix is a modified corn starch that binds water. It acts as a thickener and stabilizer, limiting the risk of syneresis.

It is very stable to processes (stable to freezing, heat treatments, shearing, etc) and other conditions of use (acidity, alcohol, etc.).

Souflix is cold-soluble so it can be used in a cold or hot process.

It has a short and creamy texture, and has a neutral flavour. Dosage and application :
10 to 80 g / kg of mass
1 to 8% of total mass

Dissolve by stirring into a cold liquid, using a whisk or immersion blender."
